- 3 eggs, separated

- 1 tablespoon grated lemon zest
- 1/2 tablespoon almond extract

- 1 cup chocolate, finely cut
- 1 cup heavy whipped cream
- 2 tablespoons orange liqueur
For the moistening syrup:
- 100ml water
- 40 grams sugar
- 2 tablespoon orange liqueur
For the candied orange filling:
- 1/2 cup candied orange peel
- 1 tablespoon orange liqueur
For the whipped cream:
- 1 cup heavy whipped cream
- 1 tablespoon sugar
- 1 tablespoon orange liqueur
For the Assembling:
- 1 shaved milk chocolate
- 1 cup candied orange peel
- 1 cup blanched Pistachio
- 100 grams confectioners’ sugar
How to make Chocolate Pistachio Orange Cake Dessert
Step 1: Preheat the oven to 350°F. Butter a deep spring form pan and line the bottom with a piece of parchment paper, cut to fit.
Step 2: For the sponge, process the nuts in a food processor until very fine. Sift the cake flour over the nuts and combine. Whip the yolks, then whip in half the sugar until light in colour and aerated.
Step 3: Whip the egg whites and salt on a medium speed until white and opaque. And then, increase the speed and whip in the remaining sugar. Continue whipping the whites until the whites hold a firm peak.
Step 4: For the yolks into the whites, then fold in the pistachio mixture in two or three additions.
Step 5: Pour the batter into the prepared pan. Place into the preheated oven and bake it for 25 to 30 minutes.
Step 6: Remove the cake from oven and let it cool to room temperature.
Step 7: For the Ganache, bring the cream to a boil and pour over the chocolate in a bowl. Let stand 2 minutes, then whish smooth and strain into another bowl, refrigerate, whisking until cool, but not set.
Step 8: For the Syrup, stir the water with sugar in a small pan and bring to a boil. Cool and stir in the orange liqueur.
Step 9: For the Filling, finely chop the peel and adding with the liqueur.
Step 10: For the Whipped cream, combine the cream, sugar and liqueur and whip on medium speed until firm.
Step 11: For the Assembling, using a sharp serrated knife, divide the Pistachio Sponge into two layer and place on a cardboard. Moisten with half the syrup and spread with most of the Ganache, reserving some for a decoration. Drain the candied peel and distribute evenly on the Ganache. Cover with a layer of whipped cream.
Step 12: Place the second layer on the cream and moisten with the remaining syrup. Cover the outside of the cake with the shipped cream and press the shavings against the side of the cake. Make a border of rosettes around the edge of the cake with the remaining Ganache and decorate the rosettes with cut-outs of candied peel and some pistachios.
Step 13: Place some chipped pistachios in the center and sprinkle them lightly with confectioners’ sugar.
Step 14: Refrigerate the cake for at least 5 hour. Slice to serve and enjoy it!
