Nian Gao is a Chinese sticky cake which made with glutinous rice flour, brown sugar, Chinese dates, milk, sesame seeds, vegetable oil, and water. Nian gao is well known as Chinese New Year’s cake and it is available to consume all around the year. In generally, Nian Gao is serve as dessert and it is always eaten to celebrate the reunion and harmony of a Chinese family during the Chinese New Year.
History of Nian Gao Dessert Recipes. The word ‘Nian Gao’ is come from Chinese word, it is ’粘糕’ which means Sticky Cake in Chinese community. The Chinese word ‘粘’ (nián) which means “sticky” is identical in sound ‘年’ which means “year”. So, Chinese Community replace the name of ’粘糕’ to ‘年糕’ in order to increase the relevancy of Nian Gao to the Chinese New Year. Meanwhile, ‘Gao’ is a homonym for cake and to rise up. So, people believe eating Nian Gao has the symbolism of raising oneself higher in each coming year (年年高升). Ingredients of Nian Gao Dessert Recipes
To prepare the Nian Gao Dessert for 4 persons serving, you are required to ready the following ingredients:
- 350 grams glutinous rice flour
- 80 grams brown sugar
- 400ml boiling water
- 1/2 cup Chinese dates, softened in water
- 1/2 tablespoon milk
- 1/2 tablespoon white sesame seeds
- 1/2 tablespoon vegetable oil
How to make Nian Gao Dessert
Step 1: Preheat the wok to low heat degrees for steaming.
Step 2: Stir the sugar with the boiling water until dissolve in a bowl.
Step 3: In another bowl, soak the Chinese dates in a how water until softened.
Step 4: In a large bowl, combine the glutinous rice flour with the previous sugar mixture. And then, stir in the milk until the dough is smooth and satiny texture.
Step 5: Combine the dough with the Chinese dates mixture and kneading again until soft and smooth.
Step 6: Grease a square cake pan with vegetable oil, place the dough in the cake pan and spread it out to the edges.
Step 7: Sprinkle the top of dough with sesame seeds.
Step 8: Steam the cake in the preheated wok with medium heat for 30 to 35 minutes.
Step 9: Remove the cake from wok and let it cool completely.
Step 10: Loosen the edges with a knife to remove the cake from the pan. And then, wrap the cake with wax paper and refrigerate for 4 hours.
Step 11: Cut the cakes into quarters and re-steam or fry the cakes to serve.
